I love sweets. If you follow my Instagram this will not come as a surprise to you. I pretty much post sweet treats when I post food, so it’s no wonder that I also love to bake. And what better than your mom’s (by that I mean my mom’s) cookies!
Of course when I make them they aren’t as good as when my mom does, but hey watcha gonna do? Live with your parents the rest of your life? I mean… maybe but also NO WAY YOU CAN’T DO THAT. So I bake them myself and hope for the best, and they usually turn out pretty good. My roommate said they were so I must’ve done something right.
The recipe is pretty simple and it make about three dozen or so cookies. A lot of the time my mom makes a double batch and just freezes the rest and we have cookies for months. It’s genius! I did freeze the rest that I made because I only baked a dozen, and I have enough for at least two more batches. Freezing cookies are perfect for when you only want one cookie or when you have to bring something to a party or event. Super easy, and super good, these cookies are one of my favorite recipes EVER.
Ooey, Gooey Chocolate Chip Cookies
1/2 lb. of butter, unsalted
1 cup brown sugar
3/4 c. granulated sugar
1 egg yolk
3 c. flour
1 Tbsp. vanilla extract
3/4 tsp. salt
3/4 tsp. baking soda
2 c. Milk chocolate chips
Cream butter, brown sugar, and granulated sugar. Add egg, egg yolk, and vanilla. Beat for 4 minutes. The dough will change consistency to very creamy and light (whip longer than you think you need to. Your arm WILL get really tired.) Add flour, baking soda and salt. Mix in chocolate chips. NOTE: Milk chocolate chips are recommended but I used semi-sweet this time because I grabbed them by mistake and it wasn’t bad, but it’s not the same. Trust me. Drop dough on a cookie sheet covered in wax paper (or tin foil) using a small ice cream scoop. Bake for 10-12 minutes at 350 degrees.
